How to make Sweet Potato Croquettes:

  1. First, peel the sweet potato, cut it into rounds, place it in a steamer pot, cover with a lid, and cook until soft.
  2. In the meantime, grate the zucchini, place it in a colander set over a bowl, salt it with ¼ teaspoon of salt, mix well, and let it rest for 10 minutes.
  3. Now, add a drizzle of extra virgin olive oil into a non-stick pan, add the sliced onion, mix, and let it sauté for about 3 minutes on medium heat.
  4. Transfer the cooked sweet potato rounds to a container, add the sautéed onion, and mash everything with a fork until you obtain a purée. Now squeeze and add the grated zucchini, almond flour, grated Parmesan, and 50 grams of breadcrumbs.
  5. Season with the herbs of your choice, garlic powder, and chili flakes if desired, then mix with a spatula to obtain a smooth, soft, and compact mixture.
  6. Take approximately 40 grams of mixture at a time, shape into croquettes with your hands, coat them in breadcrumbs, and place them on a baking sheet lined with parchment paper and lightly greased with olive oil. Continue until all the mixture is used up, then drizzle with a little extra virgin olive oil.
  7. Finally, bake in a preheated oven at 220°C (428°F) for 20 minutes, allow to cool slightly, and then enjoy your croquettes.
