  • 2 tablespoons flour
  • 4-5 garlic cloves
  • 3 celery stalks
  • 2-3 tomatoes
  • 3 carrots
  • Rosemary
  • Parsley
  • 1 1/4 cups red wine
  • 2 cups beef broth
  • Salt
  • Pepper
  • Cumin
  • Olive oil
  • 1/2 cup milk

How to make Osso buco:

  1. Take 4 pieces of beef osso buco, wrapped in a membrane to prevent deformation during cooking: tie with kitchen twine or make cuts in the membrane.
  2. Salt and pepper on both sides. Coat the meat in flour and shake off excess. Brown in very hot oil. Keep the heat high to cook the meat well.
  3. Meanwhile, chop the vegetables. Two medium onions or one large one. Two or three carrots. It’s not necessary to chop the vegetables very finely.
  4. Then, take three or four garlic cloves. Three celery stalks (don’t remove the strings). Remove the meat from the heat when it’s well browned.
  5. Meanwhile, take two tomatoes. Three bay leaves, rosemary, and parsley. Sauté the vegetables in the same oil. Add the bay leaf, salt, cumin, and pepper. After 5 minutes, add the tomatoes. Then, pour in the beef broth, specifically two cups.
  6. Add the herbs and red wine. Boil for two minutes. Return the meat to the pot. Add the broth. Cover and cook for one and a half to two hours. Prepare a delicious sauce.
  7. Strain all the contents of the dish. The juice has an incredible, very intense flavor. Add 1/2 cup of heavy cream and heat for 3 minutes. Pour this sauce over the osso buco.
