How to make Pumpkin Pancakes:

  1. Clean the pumpkin, cut it into small pieces, and cook it:

  2. Let the pumpkin cool.
  3. Peel the potatoes and blanch them for 20 minutes.
  4. Put the blanched potatoes in a bowl and mash them well into a puree.
  5. In a large bowl, combine the mashed pumpkin, mashed potatoes, a pinch of salt, bread crumbs, parmesan cheese, and flour.
  6. Mix well until you get a firm mixture.
  7. Form lightly flattened patties with your hands.
  8. Place the patties in the freezer while the oil heats up.
  9. Heat the oil to 160°C (320°F).
  10. Fry the patties, browning them on all sides.
  11. Drain the fritters on paper towels.
  12. Let them cool slightly before serving.
