Lemon meatballs : the juiciest meatballs ever !…
Lemon meatballs is an easy recipe, and a guaranteed success! A variation to the classic meatballs with sauce, but as good as meatballs with mushrooms or ricotta cheese meatballs, which are light and tasty. Lemon meatballs are the perfect solution to bring to the table when you have little time and sudden guests. They are a delicious dish consisting of mixed minced meat, eggs, Parmesan cheese and breadcrumbs. They are quick, fragrant and tender.

Ingredient:

  • 600g (21 oz) minced meat (veal and pork mix)
  • 1 egg
  • 40g (½ cup) Parmesan cheese, grated
  • 40g (½ cup) breadcrumbs
  • 10g (0.35 oz) salt
  • Milk, as needed
  • Juice of 1 large lemon

How to prepare Lemon meatballs:

  1. In a large bowl, combine the minced meat, egg, salt, grated Parmesan cheese, breadcrumbs, and milk. Mix well with your hands until all the ingredients are combined.
  2. Take a fistful of meat and form many patties, rolling them with your hands.
  3. Roll the patties in flour.
  4. Arrange the patties in a frying pan with a drizzle of olive oil. Brown them for a few minutes, turning them often so they do not burn.
  5. Deglaze the pan with wine and let it evaporate.
  6. Just before the end of cooking, squeeze a lemon and pour the juice into the pan.
  7. Continue cooking for another 5 minutes.
  8. Serve with chopped parsley.
