Soft Apple Cookies the quick recipe to make in a stir for tasty, wholesome, breakfast treats for the whole family. Be sure to stock up on these delicious cookies because once you taste them you really won’t be able to resist finishing them all. There are bits of apple and lemon zest in the dough to make them really fragrant. I did not put cinnamon even though I like it very much because I wanted them super simple but if you want you can put a half teaspoon of it. Among cookie recipes this is one of the simplest along with Torcetti and Pumpkin Cookies and maybe you can try those too. Let’s see how to make Soft Apple Cookies I am sure they will disappear in no time.

Ingredients:

  • 380g plain flour / 3 cups all-purpose flour
  • 2 eggs (at room temperature)
  • 90g caster sugar / 1/2 cup granulated sugar
  • 160g butter, softened / 11 tablespoons unsalted butter, softened
  • 2 teaspoons baking powder
  • 1 lemon
  • 2 apples
  • Icing sugar/ Powdered sugar, as needed

How to prepare Old-Fashioned Apple Cookies:

  1. Let’s take the apples and peel them, cut them into small pieces. Let’s put them in a bowl and add lemon, let it macerate for 10 minutes.
  2. Let’s put the eggs in a bowl. Let’s whip them and then gradually add the sugar and lemon zest. As soon as the mixture becomes frothy we add the softened butter and continue working the ingredients. We add the flour a little at a time, continuing to work the mixture well. We also combine the baking powder and knead. Then the macerated apples. We knead everything well.
  3. Let’s take a spoon and portion the cookie dough ( they will spread out so don’t make them too big). Let’s arrange them on a baking sheet slightly apart and leave them 30 min in the freezer.
  4. Let’s bake them at 180° (340 °F) static or 170° (320 °F)   ventilated for about 25 min. Once ready let’s take them out of the oven and let them cool completely then serve them maybe with some powdered sugar on top.
