Cloud-Like Confections: Muffins Made with Yogurt That’ll Make Your Taste Buds Sing!

These yogurt muffins are very easy and quick to make, delicious and perfect for breakfast and snacks. They’re soft, flavorful mini cakes that the whole family will love!

Ingredients for 6-7 muffins:

  • 1 Egg
  • 40 ml (2 3/4 tablespoons) Sunflower oil
  • 125 g (1 cup) All-purpose flour
  • 1 packet Vanilla sugar (or 1 tsp vanilla extract)
  • 125 g (1/2 cup) Plain yogurt
  • 60 g (1/4 cup) Pearl sugar
  • 1/2 packet (1 tsp) Baking powder

How to make Muffins made with yogurt ?

  1. In a bowl, mix the sugar and egg using an electric mixer or a spoon until the mixture is light and fluffy. Then incorporate the yogurt.
  2. Gradually add the sifted flour, alternating with the oil. Add the vanilla sugar (or extract) and baking powder. Continue mixing with the electric mixer until the batter is smooth and creamy.
  3. Pour the batter into muffin liners, filling them about 3/4 full. Sprinkle pearl sugar on top.
  4. Bake in a preheated oven at 340°F (170°C) for about 15-20 minutes. Use a toothpick test to check if they’re done before removing from the oven.
  5. Once baked, let them cool completely on a wire rack. If desired, dust with powdered sugar before serving.

Tip: You can double the recipe if you want to make more yogurt muffins!
