How to prepare Mushroom Chicken Scallopini Recipe:

  1. Finely chop the parsley and keep it aside. Crush a garlic with the palm of your hand, leaving it with the peel, we will use it to flavor the oil in which the mushrooms and chicken cutlets will be cooked.
  2. Use thinly cut slices of chicken breast so as to shorten the cooking time.

  7. After 5 minutes turn the chicken breasts back into escalopes and add the mushrooms you had kept aside if necessary pour in a couple of tablespoons of water and finish cooking with the lid on.
  8. When the cream has thickened, scatter plenty of chopped parsley and a pinch of black pepper to taste.
