I don’t know if you are a morning person, but me–definitely not! To get me out of bed I need a good reason. Sometimes it’s the evening with girlfriends that’s waiting for me that night, others it’s the walk to the beach that I’m going to take after work. Still others it is simply a good coffee cake ready in the kitchen!

Ingredients :

  • 3 eggs
  • 190g (3/4 cup + 2 tbsp) sugar
  • 120g (1/2 cup) room temperature brewed espresso or strong coffee, divided:
  • 60g (1/4 cup) for the batter
  • 60g (1/4 cup) for the topping
  • 1 teaspoon instant coffee (optional)
  • 300g (2 1/2 cups) all-purpose flour (or Italian ’00’ flour if available)
  • 100g (1/3 cup + 1 tbsp) room temperature water
  • 85g (1/3 cup) sunflower oil (or any neutral vegetable oil)
  • 1 sachet (16g or about 4 teaspoons) baking powder
  • 60g (2 oz) dark chocolate (55% cocoa)

How to prepare Coffee Plumcake:

  1. We start by cracking the eggs in a bowl, add sugar, a pinch of salt and beat with electric whips on medium power for 3-4 minutes. We will get a swollen and frothy mixture.
  2. Now we add the liquids: 60 g of iced coffee, the seed oil and the water. We mix again with the electric whips, add the instant coffee (optional but recommended) and continue to whip the mixture.
  3. Finally we add the powders: the flour a little at a time and the sifted baking powder. We operate the whisks and knead the dough again to remove all the lumps.
  4. The dough is ready, pour it into the pumcake mold lined with baking paper, level and bake in a static oven preheated to 180°C (350°F) for 45 minutes. Monitor the baking and do the toothpick test before baking.
  5. Let’s prepare the topping: in a small bowl suitable for microwaves we put the chopped chocolate, add the coffee and microwave (or melt in a bain-marie) for a few tens of seconds. Then we stir with a teaspoon and the topping is ready!
  6. When the plumcake is cooked, let’s remove it from the mold, pour the chocolate coating over it and level. The coffee plumcake is ready–simply delicious!
