Ingredients for Coconut Yogurt Cake:

  • 125g (1/2 cup) plain yogurt
  • 100g (1 cup) desiccated coconut
  • 30g (2 tablespoons) stevia sweetener*
  • 3 large eggs
  • 3 tablespoons cornstarch (cornflour)
  • A sprinkle of grated coconut for topping

*Sweetener alternatives:

  • 60g (1/4 cup) granulated sugar
  • 60g (1/4 cup) maltitol
  • 60g (1/4 cup) erythritol

For the optional syrup:

  • 50ml (3 1/2 tablespoons) water
  • 1 tablespoon sugar-free apricot jam

How to make Fluffy Coconut Cake:

  1. First break the eggs into a bowl, add stevia sweetener (or maltitol, erythritol or sugar) and beat well with a hand whisk.
  2. Now add yogurt, stir, incorporate in dehydrated coconut, cornstarch and stir to make a smooth and homogeneous mixture.
  3. Now line a round hinged mold with special paper, pour in the dough and bake in a preheated oven for 35 minutes at a temperature of 180°C (350°F).
  4. Once this is done, place the apricot jam in a bowl, incorporate the water and stir with a spatula to make it more liquid.
  5. Finally bake the cake, garnish it with syrup, prick the surface with a toothpick, remove it from the mold, sprinkle with grated coconut and serve.
