Easy and fluffy recipe cake made with cinnamon dough base with whole wheat flour, apple and raisins.

Sweet autumn cake , so called because it is very reminiscent of strudel in flavor and ingredients, a cinnamon-flavored dessert excellent for snack or breakfast.

Ingredients for the Autumn Apple and Raisin Cake:

  • 3 whole eggs at room temperature
  • 160g (3/4 cup) granulated sugar
  • Grated zest of one lemon
  • Vanilla extract or vanilla flavoring
  • 100ml (1/3 cup + 1 tablespoon) vegetable oil (I use sunflower oil)
  • 25ml (1.5 tablespoons) grappa or rum
  • 180g (1 1/2 cups) all-purpose flour
  • 1 sachet (2 teaspoons) baking powder
  • 2g (1/2 teaspoon) ground cinnamon
  • 2 apples, diced
  • 50g (1/3 cup) wholemeal flour (whole wheat flour)
  • 60g (1/3 cup) sultanas (golden raisins)

How to prepare Autumn Apple and Raisin Cake:

  1. To make this soft and fragrant apple raisin cake, we start by buttering and flouring a cake pan with a diameter of 22-24 centimeters.
  2. In the bowl of a planetary mixer, whisk the whole eggs with the caster sugar, lemon zest and vanilla until light and fluffy.
  3. Still whipping, drizzle in the seed oil and grappa or rum and continue whipping until incorporated.
  4. Add the flours previously sifted with the baking powder, cinnamon and with a bottom-up motion incorporate everything.
  5. Finally add the apples cut into small cubes and the raisins soaked in water and rum, squeezed and mix everything together.
  6. Pour the mixture into the previously buttered and floured cake pan, add apple slices if you like and bake in a static oven preheated to 175° (350°F) for about 45-50 minutes. (do toothpick test)
  7. Once baked and allowed to cool, place the cake on a serving plate and if you prefer, sprinkle with powdered sugar.
  8. At this point your soft and delicious fall, apple and raisin cake will be ready to enjoy for breakfast or snack.
