Chicken Burrito: A Typical Tex-Mex Street Food…

The burrito is a Mexican street food beloved worldwide. Its vibrant colors, bold flavors, and sweet-and-sour notes are just a few elements that make this one of the most famous and loved quick dishes of all time. The ingredients include meat, in this case chicken breast, and vegetables such as bell peppers, tomatoes, and lettuce, all wrapped in a tortilla and accompanied by a sauce.

Ingredients :

  • 4 large flour tortillas
  • 400g (14 oz) sliced chicken breast
  • 1 ripe avocado
  • 200g (7 oz) plum tomatoes (vine tomatoes)
  • Chili powder, to taste
  • 2 lemons
  • 50g (3.5 tbsp) extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 yellow bell pepper
  • 100g (3.5 oz) lettuce
  • 100g (3.5 oz) plain Greek yogurt
  • Dried chives, to taste

How to prepare Chicken Burrito:

  1. First cut the meat into strips.
  2. Pour the chicken into a bowl and drizzle with the oil, lemon zest and juice, honey, smoked paprika, and salt and let marinate 30 minutes, covering with plastic wrap.
  3. Prepare the guacamole. Cut the avocado in half and remove the pit, then with a spoon scoop out the pulp by peeling it from the skin and place it in a bowl. Squeeze the lemon and add the juice to the avocado pulp. Adjust for salt and pepper.
  4. Dice the tomato and shallot and add them to the avocado pulp.
  5. Season with a drizzle of oil, add the chopped parsley (or cilantro), salt, and pepper and mix and then, with the tines of a fork, mash all the ingredients thoroughly until smooth.
  6. The lemon guacamole is ready. Pour it into a bowl and set aside.
  7. Heat a round of oil in a skillet and pour in the chicken with all its marinating juices. Cook over high heat for 10 minutes so that the chicken caramelizes, forming a crispy crust.
    In a nonstick skillet, sear the tortilla on both sides, then sprinkle the shredded cheddar in the center and let it melt.
  8. Transfer the tortilla to a plate or cutting board, and top with the lettuce and tomato. Adjust for salt. Also add the guacamole sauce (or if you prefer a yogurt sauce).
  9. Now take the two side flaps of the tortilla and fold them over the filling. Take the flap at the base of the tortilla and fold it too and continue wrapping the burrito around itself until it is sealed.
  10. Pan-fry it a few minutes on both sides.
  11. Divide it in half and serve!
