Each of us has those 10 recipes that we consider “sacred.” Let me explain further. In my opinion, those who love to cook make recipes of two types. On the one hand there are those recipes that are recommended to you, that you see on social, that you experiment with hoping that they come out well and do not betray you. On the other hand, there are those recipes that are trusted by now , that you know are foolproof and that you keep there because, when needed, you know they are a guarantee of success.

Ingredients:

  • 3 eggs
  • 200g (7 oz or 1 cup) sugar
  • 300g (10.5 oz or 2 1/2 cups) all-purpose flour
  • 130g (4.6 oz or 1/2 cup + 1 tablespoon) room temperature water
  • 130g (4.6 oz or 1/2 cup + 1 tablespoon) vegetable oil
  • 1 packet (16g or about 4 teaspoons) baking powder
  • 1 packet vanilla sugar (or 1 teaspoon vanilla extract)
  • Zest of 1 lemon
  • Powdered sugar (for dusting)
  • Butter and flour (for greasing the pan)

How to Prepare Homemade Water Cake Recipe:

  1. In a large bowl, break the eggs and add the sugar. Operate the electric whips on medium-high power and work the mixture for 5 minutes non-stop! You will get a light, frothy and puffy dough!
  2. Now add the 00 flour by putting in half at a time and sifting. Also add, again sifting, the vanillin and baking powder. Give a bottom-up stir so as to partially incorporate the powders and complete by adding the oil and water as well. Whisk again until the mixture is puffy and lump-free.
  3. Pour the mixture into a well-buttered and floured 22- or 24-cm mold. Give it a few taps so it levels out well then bake at 180°C (340°F), a hot static oven, for about 40 minutes. Monitor the cooking and do the toothpick test before baking!
  4. Once cooked, take the water cake out of the oven, let it cool and remove it from the mold. Add a sprinkle of powdered sugar and the magic is done! I recommend that you let it cool completely before tasting it; in fact, it tastes even better the next day! Cover it with foil and you will see that it keeps soft for 4-5 days without any problems!
