Ingredients:
- 140 g (5 oz or 1 1/2 cups) rolled oats
- 500 g (1 lb 2 oz or 3 1/2 cups) strawberries
- 100 g (3.5 oz or 3/4 cup) chopped almonds
- 1 egg
- 7g (1 1/2 tsp) baking powder
- 1 tablespoon honey
- A drizzle of almond oil (or any neutral vegetable oil)
How to Prepare the Healthy Cake:
- Preheat the oven to 180°C (350°F).
- Grind the rolled oats in a food processor until they reach a flour-like consistency. Transfer to a bowl and set aside.
- Blend the strawberries in a blender until pureed.
- Mix the oat flour and strawberry puree in a bowl until smooth.
- Add the honey, egg, and baking powder to the mixture. Stir well to combine all ingredients.
- Fold in the chopped almonds (or almond flour if using).
- Lightly grease a 16cm (6-inch) round silicone baking pan with almond oil or any neutral oil.
- Pour the batter into the prepared pan. Gently tap the pan on the counter to remove any air bubbles.
- Bake in the preheated oven for 40 minutes.
- Once done, turn the cake out onto a serving plate and let it cool before serving.
