Ingredients:

  • 3 bell peppers
  • 6 eggs
  • 3 tablespoons grated Parmesan cheese
  • 3.5 oz (100g) diced ham
  • 1 tomato, diced
  • 1 shallot, minced
  • 1 tablespoon mascarpone cheese
  • Salt and pepper to taste

How to make stuffed bell peppers:

  1. First, wash the bell peppers, dry them, cut them in half, clean out the seeds and inner membranes, and set them aside.
  2. Crack the eggs into a bowl, add the mascarpone, salt, pepper, and grated Parmesan cheese, and whisk by hand.
  3. Now add the diced tomato, minced shallot, and diced ham, then mix to combine all ingredients.
  4. Place the pepper halves cut-side up in a baking dish with about 1/4 inch of water. Fill each pepper generously with a spoonful of the mixture.
