Fresh mozzarella is not recommended, as it would produce excessive liquid during cooking. If you really want to use it, leave it in the fridge overnight to dry out.

Ingredients:

  • 21 oz (600g) zucchini (courgettes)
  • 2.5 oz (70g) provolone (or smoked scamorza)
  • 1.8 oz (50g) grated cheese (Grana Padano or Parmesan)
  • 1.8 oz (50g) cooked ham
  • 1 oz (30g) breadcrumbs
  • 1 egg
  • 2 tablespoons extra virgin olive oil
  • 1 clove of garlic
  • Salt and pepper to taste

How to make Zucchini Casserole:

  1. Preheat the oven to 350°F (180°C/160°C fan).
  2. Wash and dry the zucchini (courgettes), then grate them finely using a large-holed grater.
  3. Heat the oil in a large pan, add the grated zucchini (courgettes), and sauté for at least 15 minutes. Season with salt and pepper, remove the garlic, and let cool.
  4. While the zucchini (courgettes) cool, dice the provolone and cooked ham.
  5. Mix the zucchini (courgettes) with Parmesan and breadcrumbs, adjusting salt and pepper if necessary.
  6. Sprinkle some breadcrumbs in a baking dish, then add half of the zucchini (courgette) mixture.
  7. Arrange the provolone and ham on the zucchini (courgette) base, then add the remaining zucchini (courgettes).
  8. Sprinkle with more breadcrumbs and bake in the preheated oven for 40 minutes.
  9. Remove from the oven and serve the casserole warm or cold, as you prefer.
