  • 200ml (6.8 fl oz) milk

  • 4 eggs
  • 2 sprigs of basil, torn
  • 2 garlic cloves, minced
  • 1 1/2 teaspoons salt + extra to taste
  • Chopped parsley to taste
  • Black pepper to taste

How to make Low-Calorie Vegetable Pizza Bake:

  1. First, pour 20ml (1.4 tbsp) of extra virgin olive oil into a non-stick pan, add the chopped onion and minced garlic, mix well, and let them brown.
  2. Add the peeled and sliced carrot, stir, let it sear briefly, then add the sliced bell peppers, mix, and let them soften.
  3. Now incorporate the trimmed and sliced zucchini, season with salt and pepper, mix, cover with a lid, and let it cook for 6-7 minutes. Add the torn basil leaves, stir, and turn off the heat.
  4. Line a baking tray with parchment paper, grease it with a drizzle of olive oil, spread the sautéed vegetables on it, and set aside.
