ACE Plumcake, the fragrant, fluffy dessert you’ll love…

You know how as children we used to pour glasses upon glasses of ACE juice at snack time? Mamma mia what memories! Orange, vibrant, sweet juice with a tart note that went great with all kinds of snacks. Here, now imagine just that flavor and turn it into a soft, fragrant and easy easy cake. That’s right because the ACE pound cake is that and so much more! It is a cake that, slice by slice, will entice you to save the recipe and replicate it a thousand more times! It contains no milk or butter, but lots of carrots, oranges and lemons!

Ingredients :

  • 3 eggs
  • 200g (1 cup) caster/granulated sugar
  • 120g (1/2 cup) orange juice
  • Zest of 1 unwaxed/organic orange
  • 40g (2 tbsp + 2 tsp) lemon juice
  • Zest of 1 unwaxed/organic lemon
  • 100g (1/2 cup) vegetable oil
  • 260g (2 cups) plain/all-purpose flour (type 00 if available)
  • 170g (1 1/2 cups) carrots, peeled and grated
  • 1 sachet (16g / 2 tsp) baking powder

How to Prepare ACE Plumcake:

  1. First, bring together the sliced carrots, seed oil, lemon juice, and orange juice in the blender jug. Blend everything well and keep the resulting mixture aside.
  2. In a high-sided bowl whisk the eggs with the sugar using electric whips.
  3. Now add the carrot-citrus mixture along with the grated zest of 1 organic lemon and 1 organic orange.
  4. Mix again with electric whips then add the 00 flour in several batches and finally the sifted vanilla baking powder. You will get a dough full of bubbles!
  5. Transfer it to a pudding mold with baking paper and bake at 180°C (340°F), static oven for 40-45 minutes. I recommend you monitor the baking and do the toothpick test before baking. As always when making cakes, however, remember not to open the oven until at least 30-35 minutes have passed.
  6. And there you have our ACE super plumcake ready! You’ll smell it all over the house! Decorate with lemon and orange slices and the best smelling plumcake ever is served!
