Almond and orange cookies : Perfect company for breakfast coffee…
Today I bring you a mouth-watering and easy-to-prepare recipe: soft almond and orange cookies. These treats are perfect to accompany breakfast coffee or to enjoy a sweet break during the day.
The interesting thing about this recipe is that it is prepared with only four ingredients: egg white, almonds, sugar and fresh orange juice, which give the cookie a soft and light texture, but also an intense and fruity flavor.
The fresh orange juice gives these delicious pastries a fresh, fruity flavor that pairs perfectly with the sweetness of the almonds. Complementing them is orange marmalade, which gives that creamy note to the center of the cookies.
Ingredients :
- 115g (4 oz) ground almonds / almond flour
- 100g (1/2 cup) sugar (plus extra for decoration)
- 29g (1 oz) egg white
- 8g (1/2 tbsp) freshly squeezed orange juice
- 4 tablespoons orange marmalade
- Grated zest of half an orange
How to make Almond and orange cookies:
- In a bowl combine the squeezed orange juice, egg white, sugar, grated orange zest and almond flour.
- Compact everything together and pull off 25 g pieces, form into balls with hands lightly moistened with juice from the orange, then coat in sugar.
- Place the balls on a baking sheet. Poke holes in the center using the handle of a wooden ladle, and put a little orange marmalade inside with the help of a teaspoon.
- Bake in a preheated oven at 210°C and bake for 10 minutes. Once baked they will still be soft, so let them cool and they will firm up. Optionally, You can Complement them with powdered sugar.
