Almond carrot cake with orange : An Easy Recipe Ready in 10 Minutes…
Carrot cake is a perfect dessert for breakfast or an everyday snack. I assure you that everyone really likes it, young and old! I am telling you this from experience!
Like any classic recipe there are so many versions. Some use almonds and some use orange juice, some blend carrots and others grate them. I myself have tried several versions and I assure you that this is the absolute best! I guarantee you, try it to believe!
Ingredients :
- 240g (8.5 oz) carrots
- 120g (1 cup) almonds
- 180g (3/4 cup + 2 tbsp) sugar
- 2 large eggs
- 100ml (1/3 cup + 1 tbsp) milk
- 50ml (3 1/2 tbsp) sunflower oil
- Zest of 1 orange
- 50ml (3 1/2 tbsp) orange juice (about 1 orange)
- 1 tsp baking powder
- 300g (2 1/2 cups) all-purpose flour (Type 00 in Italy)
- 1 pinch of salt
- Ground cinnamon, to taste
How to prepare Almond carrot cake with orange:
- Blend the peeled and chopped carrots with the milk, oil, and orange juice.
- Add the eggs and orange zest and mix with a whisk.
- In a large bowl mix together flour, sugar, sifted baking powder, a pinch of salt, and a sprinkling of cinnamon if you like.
- Pour in the liquid mixture and stir with the help of a spatula until everything is blended.
- Pour the mixture into a previously buttered (or oiled) and floured 24cm cake pan .
- Bake for 45 minutes at 180ºC (350°F). Before taking the cake out of the oven, do the toothpick test.
- Allow the cake to cool before taking it out of the oven. I know it will be a tough test because the smell that will invade the house will be delicious!
