Ingredients :
- 4 medium eggs
- 300g (10.5 oz) amaretti biscuits/cookies
- 200g (7 oz) dark chocolate/semi-sweet chocolate, divided:
- 100g (3.5 oz) for the batter
- 100g (3.5 oz) for the topping
- 250g (2 cups) plain flour/all-purpose flour
- 100ml (1/2 cup) vegetable oil
- 150g (3/4 cup) caster sugar/granulated sugar
- 200ml (3/4 cup + 2 tbsp) double cream/heavy cream
- 1 sachet (16g or 2 1/4 tsp) baking powder
How to make Amaretti chocolate cake:
- Crumble the amaretti biscuits/cookies with your hands and set aside. Reserve some for decoration.
- Chop the dark chocolate and set aside.
- In a large bowl, whisk eggs and sugar until smooth and fluffy.
- Gradually add the vegetable oil, whisking to combine.
- Add the room temperature cream, whisking continuously.
- Sift together the flour and baking powder, then add to the wet ingredients. Whisk until well combined.
- Fold in the crumbled amaretti (except those reserved for decoration) and 100g (3.5 oz) of the chopped chocolate using a spatula. Mix until homogeneous.
- Pour the batter into a buttered and lightly floured 22-24 cm (9-10 inch) baking pan.
- Bake at 180°C (350°F) in a conventional oven or 170°C (340°F) in a fan-forced oven for 45 minutes.
- Allow the cake to cool in the pan.
- Melt the remaining chocolate in a bain-marie or microwave (50 seconds at full power).
- Frost the cooled cake with the melted chocolate.
- Decorate with the reserved amaretti crumbs and any remaining chocolate.
- Refrigerate for 15 minutes before serving.
