This incredibly easy and delicious cake features chunks of chocolate within the batter and on top as a coating, with crumbled amaretti biscuits (almond macaroons) throughout. If you’re looking for a perfect Sunday treat or a dessert for a special occasion, this indulgent cake is sure to fit the bill. It has a wonderfully soft and creamy consistency, with chocolate pieces that you can feel in your mouth. Your guests will be pleasantly surprised by this delightful cake.

Ingredients :

  • 4 medium eggs
  • 300g (10.5 oz) amaretti biscuits/cookies
  • 200g (7 oz) dark chocolate/semi-sweet chocolate, divided:
  • 100g (3.5 oz) for the batter
  • 100g (3.5 oz) for the topping
  • 250g (2 cups) plain flour/all-purpose flour
  • 100ml (1/2 cup) vegetable oil
  • 150g (3/4 cup) caster sugar/granulated sugar
  • 200ml (3/4 cup + 2 tbsp) double cream/heavy cream
  • 1 sachet (16g or 2 1/4 tsp) baking powder

How to make Amaretti chocolate cake:

  1. Crumble the amaretti biscuits/cookies with your hands and set aside. Reserve some for decoration.
  2. Chop the dark chocolate and set aside.
  3. In a large bowl, whisk eggs and sugar until smooth and fluffy.
  4. Gradually add the vegetable oil, whisking to combine.
  5. Add the room temperature cream, whisking continuously.
  6. Sift together the flour and baking powder, then add to the wet ingredients. Whisk until well combined.
  7. Fold in the crumbled amaretti (except those reserved for decoration) and 100g (3.5 oz) of the chopped chocolate using a spatula. Mix until homogeneous.
  8. Pour the batter into a buttered and lightly floured 22-24 cm (9-10 inch) baking pan.
  9. Bake at 180°C (350°F) in a conventional oven or 170°C (340°F) in a fan-forced oven for 45 minutes.
  10. Allow the cake to cool in the pan.
  11. Melt the remaining chocolate in a bain-marie or microwave (50 seconds at full power).
  12. Frost the cooled cake with the melted chocolate.
  13. Decorate with the reserved amaretti crumbs and any remaining chocolate.
  14. Refrigerate for 15 minutes before serving.
