Apple Crumble Custard Cake is a very quick dessert to make, ideal when you need to make a cake and are on a tight schedule.

The Apple Crumble Custard Cake is really good: it is flavored with lemon peel, and, unlike other recipes, it has a fairly soft texture and accompanies very well the filling, prepared with a rather thick custard, similar to a pudding, and soft apples cut into chunks!

Ingredients:

For the crumble:

  • 2 1/2 cups (300g) All-purpose flour
  • 1/2 cup (100g) Sugar
  • 1/2 cup (100g) Unsalted butter
  • 1 pinch Salt
  • Zest of 1 lemon
  • 1 Egg
  • 1 tsp (5g) Baking powder

For the custard:

  • 1/4 cup (50g) All-purpose flour or cornstarch
  • 2 Eggs
  • 1/2 cup (100g) Sugar
  • 2 cups (500ml) Milk
  • 1 tsp Vanilla extract

Additional:

  • 2 Apples, diced
  • Juice of half a lemon
  • 1 tbsp Sugar

How to make Apple Crumble Custard Cake:

  1. Cut the apples into small pieces, put them in a small pan with the juice of half a lemon and a tablespoon of sugar. Cook for about 10 minutes, then let cool and set aside.
  2. Prepare the custard: In a bowl, mix cold milk with flour or cornstarch using a whisk. Add eggs, sugar, and vanillin. Stir until completely blended.
  3. Place a strainer over a pan and pour the cream mixture through it. Cook over medium-low heat, stirring constantly. Boil for a couple of minutes, then turn off the heat.
  4. Transfer the cream to a bowl and cover it “skin-on” with foil. Allow to cool.
  5. Melt the butter in a small saucepan or microwave.
  6. In a bowl, mix the dry ingredients: flour, sugar, sifted baking powder, a pinch of salt, and grated lemon peel. Add the cooled melted butter and egg, working quickly with your hands until large crumbs form.
  7. Line a 22-24 cm diameter cake pan with baking paper. Press 2/3 of the dough into the pan.
  8. Spoon the cooled cream over the base, leaving about 1 cm from the edges.
  9. Place the apple cubes on top of the cream.
  10. Put the remaining crumbled pastry on top without pressing.
  11. Bake in a preheated oven at 180°C (350 °F) for 30 minutes.
  12. Let cool and serve.
