Apple heart cake is a mouth-watering dessert with simple flavors inspired by two homemade classics. Halfway between classic apple pie, with its soft and aromatic filling, and apple tart, with its distinctive crumbly pastry shell, this delight is a perfect mix of textures. You will be surprised by its fluffy savory touch, which harmonizes the flavors making this pie unique and special!
Ingredients:
Ingredients for the shortcrust pastry:
- 150g (1 1/3 cups / 10.5 oz) unsalted butter, softened
- 150g (3/4 cup / 5.3 oz) granulated sugar/ caster sugar
- Zest of 1 lemon
- 2g (1/4 tsp) salt
- 50g (1 large) egg
- 300g (2 1/2 cups / 10.5 oz) all-purpose flour/ plain flour
- 7g (1 1/2 tsp) baking powder
Ingredients for the filling:
- 600g (1.3 lbs / 4 large) Ambrosia apples, peeled and sliced
- 150g (2/3 cup / 5.3 oz) unsalted butter, softened
- 105g (1/2 cup / 3.7 oz) granulated sugar/ caster sugar
- 105g (2 large) eggs
- 1 vanilla bean/pod, scraped
- 5g (1/4 tsp) salt
- Zest of 1 lemon
- 120g (1 cup / 4.2 oz) all-purpose flour/ plain flour
- 60g (1/2 cup / 2.1 oz) cornstarch/ cornflour
- 22g (1 tbsp + 2 tsp) baking powder
For garnish:
- Powdered sugar/ Icing sugar, as needed
How to Prepare Apple Heart Cake:
- To prepare the apple heart cake in a bowl pour the cubed butter, sugar, salt and lemon zest.
- Knead to form a dough, then add the egg and mix again to incorporate it.
- Now pour in the flour and baking powder, mix to form a smooth dough.
- Form a loaf, wrap it with plastic wrap and leave in the refrigerator for an hour. Now cut the apples in half, then peel and core them.
- Cut them into cubes. Separately in a bowl mix the flour and frumina.
- Mix the powders and apples. In another bowl pour the butter, sugar and salt.
- The eggs, vanilla bean pulp and mix with electric whisk to make a smooth mixture.
- Add this mixture to the apple mixture, mix and keep aside. Take the shortcrust pastry and roll it out to a thickness of about 3-5 mm.
- Roll the pastry sheet on the rolling pin and roll it out onto a 24-cm-diameter mold. Trim away the excess dough by trimming the edges with a small knife.
- Pour the filling inside and level with the back of a spoon. Bake in a preheated static oven at 175°C (345°F) for about 35 to 40 minutes.
- Once ready, take the apple heart cake 28 out of the oven, let it cool, then dust with powdered sugar to taste 29 and enjoy 30!
