Avocado Bread: The Idea That Will Revolutionize Your Lunches…

Avocado bread is that recipe you don’t expect that will change your last-minute lunches forever. The reason? It’s made with only 3 ingredients, it’s packed with protein and good fats, and what’s more, the process is super easy!

Not to be confused with avocado toast, avocado bread is really a kind of avocado bread that you can stuff as you like and eat precisely as a kind of sandwich!

Ingredients :

  • 1 ripe avocado
  • 1 egg
  • A few drops of lemon juice
  • 2 oz (55 g) scamorza cheese*
  • Sesame seeds, to taste
  • Salt
  • Pepper

How to prepare Avocado Bread:

  1. Open the avocado, remove the pit and peel, cut it into small pieces and season in a bowl with salt and pepper.
  2. Mash the avocado flesh with the help of a fork.
  3. Combine the egg and grated scamorza cheese with a wide-hole grater.
  4. Spread the dough in a baking pan lined with baking paper, creating thin disks. Decorate the surface with sesame seeds.
  5. Bake in a ventilated oven (already hot) at 190 °C (375 °F)  for about 15 to 20 minutes.
  6. When the avocado breads are lightly browned, take them out of the oven and let them cool.
  7. Stuff the avocado bread as desired. To keep the recipe vegetarian I decided to fill it with stracchino cheese, arugula and cherry tomatoes.
