Baked Chickpea Nuggets: A Super Crunchy Main Dish Suitable for Everyone…
We all know about chicken nuggets, but have you ever thought that they can be recreated totally plant-based? Today I reveal how to make perfect baked chickpea nuggets!
In the meantime, let me tell you that you can use them in a complete and balanced meal paired with a low-fat cheese (or yogurt sauce as I did) and some vegetables to fill up on protein and vitamins, especially before a workout.
Ingredients :
- 100g (3/4 cup) chickpea flour (also known as gram flour or besan)
- 40ml (2 tablespoons + 2 teaspoons) room temperature water
- Zest of 1 organic lemon
- 1 teaspoon extra virgin olive oil
- 1 teaspoon vinegar (white or apple cider vinegar)
- 1 pinch of salt
- 1 pinch of paprika
- Black pepper to taste
- Breadcrumbs, as needed
How to prepare Baked Chickpea Nuggets:
- Mix chickpea flour with water, lemon zest, paprika, oil, and vinegar in a bowl.
- Add salt and pepper and form a smooth dough that can be shaped with your hands.
- Form nuggets by shaping them with your hands and bread them in breadcrumbs thoroughly. Arrange them on a baking sheet and oil them on both sides if you want a crispier and tastier result! Bake them at 180°C (350°F) for 15 minutes (preheated oven) and they will be ready.
- Enjoy them with your favorite sauce-I created one with low-fat Greek yogurt, EVO oil and pickled capers!
