Basil in oil, the recipe for preserving it fresh and aromatic throughout the winter and also obtaining a fragrant basil oil that we can use to season pasta, salads or simply a slice of freshly baked bread.
The recipe for preserving basil is very simple and does not require any special care except to sterilize the jars in which we will store it well and to top up the oil often once we open the jar to consume it. In this regard I recommend using small jars so that once opened we can consume the basil soon.

Ingredients for Basil Preserved in Oil:

  • Fresh basil leaves, as needed
  • Extra virgin olive oil, as needed
  • Salt, to taste

How to Prepare Basil Preserved in Oil recipe:

  1. To begin, sterilize the jars and caps by boiling them in water for 30 minutes or placing them in the oven at 110°C (230°F) for 15 minutes.
  2. Meanwhile, harvest the basil leaves by cutting them just below the stem. Choose only the most beautiful, fresh and undamaged leaves and wash them gently under running water. Then let them drain in a colander and transfer them to a well-cleaned tea towel. Dry them well by blotting them with another dishcloth or paper towels.
  3. Put a drizzle of oil in the jar and start making layers by alternating the basil leaves with a few pinches of salt and continue until the jar is full. Finish with a pinch of salt and add the oil to the brim.
  4. Press well to let the air escape and add more oil if necessary. Leave like this for a few hours so that the oil occupies all the available space and top up if necessary.
  5. Close the jars and store them in the refrigerator until ready to use.
  6. When you use the basil leaves always make sure that they are covered with the oil, and once finished you will have excellent basil oil to use in a variety of ways.
