Brioche Wool Roll Bread :Weave Some Magic into Your Baking Repertoire…
Wool roll bread (or wool elbow brioche) is the recipe that is all the rage on the web. It is a soft sweet brioche with a very unusual shape that resembles, precisely, a ball of wool. And of course I could not avoid making it!
It is not complicated at all and you can stuff it any way you like!
Ingredients :
- 300g (2 1/3 cups) strong white bread flour
- 80ml (1/3 cup) lukewarm milk
- 10g fresh yeast or 2 1/4 teaspoons active dry yeast
- 1 pinch of salt
- 30g (2 tablespoons) caster sugar (granulated sugar)
- 1 large egg
- 100ml (1/2 cup) single cream
- Zest of 1 orange or lemon
- Milk for brushing (as needed)
How to make Brioche Wool Roll Bread:
- Dissolve the fresh yeast in warm milk and put all the other ingredients in the bowl of the planetary mixer.
- Also add the milk and yeast mixture and knead until the dough is smooth and elastic.
- Let the dough rise in the bowl covered with plastic wrap until it has doubled in volume.
- Transfer the dough to the floured pastry board and flatten it slightly with your hands, then, divide it into 5 equal pieces as if cutting a round cake and form into balls. Cover them and let them rest 15 minutes.
- Roll out one ball at a time with a rolling pin making an oval. Fray half of the rolled out dough with the help of a tarot knife. Stuff the unbroken part with whatever you want.
- Then roll it up starting with the non-fraying side.
- Arrange the 5 rolls in the baking dish, side by side, in a circular fashion, cover and let rise until the dough has reached the edges of the mold.
- Brush the brioche ball of wool with a little milk and bake in a hot oven at 170°C for about 20 minutes.
