Butter Cookies: A Recipe That Smells Like Home…

Ingredients:
- 300g (10.5 oz or 2 1/2 cups) all-purpose flour
- 200g (7 oz or 3/4 cup + 2 tablespoons) unsalted butter, softened
- 100g (3.5 oz or 1/2 cup) granulated sugar
- 1 whole egg + 1 egg yolk
- Zest of 1 lemon
- 1 pinch of salt
- Powdered sugar (for decorating)
How to prepare Butter Cookies:
- In a large bowl, mix the soft butter with the sugar. Process these ingredients until they become a soft, smooth cream. Add the whole egg and yolk, continuing to mix, and then the grated lemon zest to give it that extra touch.
- Sift the flour with a pinch of salt directly into the bowl with the butter and egg mixture. Mix the ingredients together with gentle movements, trying to knead the dough as little as possible. When the flour is completely absorbed, you will have a smooth, firm dough.
- Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes. This step is essential for the cookies to hold their shape while baking and to bring out the flavors of the ingredients.
- Preheat the oven to 170°C (340°F) . Roll out the dough on a lightly floured surface until it is about 5 mm thick. Use cookie cutters to cut the dough into the desired shapes and transfer the cookies to a baking sheet lined with parchment paper.
- Bake the butter cookies for about 15 minutes, or until lightly browned. Remember, every oven is different, so keep an eye on the baking! Once baked, let them cool completely on a wire rack. If you wish, you can dust them with powdered sugar or decorate them however you like.
