Starting the day with a homemade dessert is definitely the best way. The coffee and milk plumcake with its unique softness, will be able to give you a full of energy and good mood! This is a soft and fragrant plumake that is inspired by one of the most common morning drinks: milk and coffee. Making the coffee and milk plumcake is really simple, it will take you very few minutes… and then let the oven do its thing! A perfect recipe even for those who are novices in the kitchen, foolproof and softness assured! And if you are a coffee cake lover for breakfast, try our muffins too !

Ingredients (for a 9×5 inch / 22×12 cm loaf pan)

  • 200g (1 2/3 cups) all-purpose flour (plain flour)
  • 3 medium eggs, at room temperature
  • 100g (1/2 cup) granulated sugar
  • 100ml (1/3 cup + 1 tbsp) whole milk, at room temperature
  • 25ml (5 tsp) strong espresso coffee
  • 50ml (3 1/2 tbsp) sunflower oil  vegetable oil can be substituted)
  • 8g (2 tsp) baking powder

How to Prepare Cafe Latte Plumcake:

  1. To prepare the coffee and milk plumcake, prepare the coffee with the mocha in the required amount. In a bowl, work the eggs, sugar with electric whisk until light and fluffy.
  2. Pour in the oil and process a few more moments with the whisk. Then add the milk and room temperature coffee.
  3. Work a few more moments with the whisk. Incorporate the flour and baking powder poured in at once.
  4. Work all the ingredients, again with the whisk, until the mixture is smooth and without lumps: it will be quite liquid. Transfer the mixture inside a 22×12 cm pound cake mold.
  5. We used a silicone one; if you prefer to use a classic mold, we recommend oiling and flouring it before pouring the mixture inside. Bake the plumcake in a static oven preheated to 180° C (350°F) for 40-45 minutes. Before baking, do the toothpick test to make sure the cake is well baked inside. Once baked, let it cool.
  6. Then unmold it on a wire rack 13 and decorate the plumcake with powdered sugar before serving.
