Cheesy Ham and Potato Fritters : a quick and tasty dish!…
Easy and stringy Cheesy Ham and Potato Fritters and if you have no ideas for dinner then take a cue from my recipe, they will go fast. I make Fritters in all kinds of ways and both sweet and savory, they are perfect with lots of ingredients and the basic batter is pretty much always the same. The batter for these with potatoes is made from boiled potatoes, flour, butter and yeast and has a fairly firm consistency that you can shape into any shape you want. The filling is made with prosciutto and provolone cheese which then really gets everyone to agree, of course you can put speck, salami, ricotta, spinach and you name it.
Ingredients:
- 350g (12 oz) boiled potatoes
- 250g (2 cups) all-purpose flour ( plain flour)
- 40g (3 tablespoons) butter
- 1 egg
- 5g (1 teaspoon) baking powder (half a sachet of instant yeast for savory preparations)
- Fresh rosemary, to taste
- Cooked ham, as needed
- Provolone or mozzarella cheese, as needed
- Salt, to taste
- Vegetable oil for frying
How to make Cheesy Ham and Potato Fritters:
- Take the potatoes, peel them, cut them into small pieces and put them in a pot covering them entirely with water, bring them to a boil for 20 minutes.
- Drain them in a bowl and mash them with a fork.
- Add the butter, flour and egg.
- Combine the salt and rosemary.
- Start kneading everything first in the bowl.
- Continue on the pastry board making a homogeneous ball of dough.
- Divide it into even-numbered balls and flatten them on the palms of your hands.
- Put ham and cheese in the center of half of the disks.
- Overlap them and seal the sides well.
- Heat the seed oil for frying in a frying pan bringing it to 155° C (310°F), as soon as it is ready start frying the fritters.
- When they are golden brown on both sides, drain them from the oil.
- Let them cool then serve them. You will see these Ham and Cheese Potato Fritters will delight you.
