Cheesy Potato and Zucchini Croquettes…
Potato and zucchini meatballs with a stringy heart are a nice tasty treat! They are prepared with simple ingredients such as potatoes, zucchini, eggs and breadcrumbs
The recipe is easy, and quick! I fried them in very little oil, but if you prefer you can also bake them in the oven. crispy and light, try them I am sure you will like them!
Ingredients:
- 2 zucchini (courgettes)
- 2 large potatoes
- 60g (2/3 cup or 2 oz) Parmesan cheese, grated
- Salt, to taste
- 1 egg
- 2 tablespoons extra virgin olive oil
- 50g (1/2 cup) breadcrumbs
- 30g (1 oz) scamorza cheese (or smoked mozzarella)
How to make Cheesy Potato and Zucchini Croquette:
- Using a large-hole grater, grate the zucchini and set aside.
- Mash the potatoes with a potato masher, after which add the squeezed zucchini.
- Season with salt, add the egg, Parmesan cheese and breadcrumbs mix everything together and make patties.
- Dip them in breadcrumbs and then cook in a pan with very little oil for 3-4 minutes.
