Chestnut Coffee Almond Cake is a fantastic, mouth-watering and perfectly balanced dessert.
This Cake is simple to make, but hides many little secrets, which create its unique taste and special goodness. Perfect is the base, made with a crumbly and tasty chestnut shortbread, and unique is the filling, which combines delicious ingredients by blending them beautifully to produce a soft, fragrant and truly rich dough.
Ingredients:
For the base:
- Chestnut shortcrust pastry (recipe in the method)
For the filling:
- 125g (4.4 oz) Almonds (unskinned)
- 100g (3.5 oz) Dark chocolate
- 50g (1.8 oz) Butter
- 1 Medium egg
- 80g (2.8 oz) Sugar
- Half a cup of Coffee
- 3 tablespoons Rum
- 1 teaspoon Coffee grounds
For decoration:
- Powdered sugar (Icing sugar in the)
- 100ml (3.4 fl oz) Fresh liquid cream (Heavy cream)
- 20g (0.7 oz) Powdered sugar (Icing sugar)
How to prepare Chestnut Coffee Almond Cake:
- Prepare the chestnut shortcrust pastry:
Follow the quick and easy recipe (link not provided). Once ready, set aside. - Prepare the filling:
a. Preheat a static oven to 180°C (350°F).
b. Toast almonds on a baking sheet for 5 minutes. Remove and let cool.
c. Blend almonds with 20g of sugar until finely chopped. - Melt chocolate and butter:
Use a double boiler or microwave, then transfer to a bowl. - Mix filling ingredients:
