This sophisticated combination brings together tender chicken with a creamy filling of juicy zucchini and smooth cheese. The entire ensemble is coated in a crispy breadcrumb crust, resulting in an irresistible culinary experience.

Ingredients :

  • Salt to taste
  • 1 clove of garlic
  • 1 zucchini (courgette)
  • 500g (1.1 lbs) sliced chicken breast
  • 2 tablespoons cream cheese (such as Philadelphia)
  • Extra virgin olive oil to taste
  • 2 eggs
  • Semi-hard cheese (like Galbanino, or preferably smoked provolone)
  • Breadcrumbs as needed
  • All-purpose flour (Plain flour)
  • Black pepper to taste
  • Vegetable oil for frying
  • Parmesan cheese

How to make Chicken Breast with Zucchini and Cream Cheese:

  1. Wash the zucchini and grate it with a large-hole grater.
  2. In a pan with a drizzle of oil, brown the garlic. Add the zucchini, season with salt and pepper, and cook for about ten minutes until softened. Finally, add the cream cheese.
  3. Salt the chicken breast slices. Stuff the center with a teaspoon of the zucchini mixture and add the cheese (smoked provolone is recommended for a more distinctive flavor).
  4. Wrap the stuffed chicken slices and set aside.
  5. In a dish, beat the eggs with salt and pepper.
  6. Dip the chicken rolls in flour, then in the egg mixture, and immediately after in breadcrumbs seasoned with salt, Parmesan, and pepper.
  7. In a frying pan, heat the oil. Lay the breaded chicken breasts and let them simmer until golden brown.
  8. Remove the rolls from the heat and first wipe them on paper towels to remove excess oil.
  9. Alternative cooking method: They can also be cooked in an air fryer. Just spray oil on the surface and bake at 180°C (350°F) for 20 minutes.
