This sophisticated combination brings together tender chicken with a creamy filling of juicy zucchini and smooth cheese. The entire ensemble is coated in a crispy breadcrumb crust, resulting in an irresistible culinary experience.
Ingredients :
- Salt to taste
- 1 clove of garlic
- 1 zucchini (courgette)
- 500g (1.1 lbs) sliced chicken breast
- 2 tablespoons cream cheese (such as Philadelphia)
- Extra virgin olive oil to taste
- 2 eggs
- Semi-hard cheese (like Galbanino, or preferably smoked provolone)
- Breadcrumbs as needed
- All-purpose flour (Plain flour)
- Black pepper to taste
- Vegetable oil for frying
- Parmesan cheese
How to make Chicken Breast with Zucchini and Cream Cheese:
- Wash the zucchini and grate it with a large-hole grater.
- In a pan with a drizzle of oil, brown the garlic. Add the zucchini, season with salt and pepper, and cook for about ten minutes until softened. Finally, add the cream cheese.
- Salt the chicken breast slices. Stuff the center with a teaspoon of the zucchini mixture and add the cheese (smoked provolone is recommended for a more distinctive flavor).
- Wrap the stuffed chicken slices and set aside.
- In a dish, beat the eggs with salt and pepper.
- Dip the chicken rolls in flour, then in the egg mixture, and immediately after in breadcrumbs seasoned with salt, Parmesan, and pepper.
- In a frying pan, heat the oil. Lay the breaded chicken breasts and let them simmer until golden brown.
- Remove the rolls from the heat and first wipe them on paper towels to remove excess oil.
- Alternative cooking method: They can also be cooked in an air fryer. Just spray oil on the surface and bake at 180°C (350°F) for 20 minutes.
