Chicken Wraps : Easy and Delicious Meal…
These delightful wraps combine succulent, seasoned chicken with creamy avocado, crisp bell peppers, and fresh coriander, creating a harmonious blend of flavours and textures. Packed with nutrients, they’re perfect for a satisfying lunch or light supper.
Ingredients:
- 2 cooked and thinly sliced boneless, skinless chicken breasts
- 4 large tortilla wraps
- 1 cup (about 50g) shredded lettuce
- 1 large red pepper
- 1 ripe avocado, cubed
- 1/2 cup (about 50g) sliced red onion
- 1/2 cup (about 75g) sliced mixed peppers
- 1/4 cup (about 35g) sliced black olives (optional)
- 1/4 cup (about 15g) chopped fresh coriander/cilantro (optional)
- 1/2 cup (about 50g) grated cheese (cheddar or your preference)
- 1/4 cup (60ml) mayonnaise
- 2 tbsp plain Greek yoghurt or sour cream
- 1 tbsp lime juice
- Salt and freshly ground black pepper to taste
How to make Chicken Wraps:
- Mix mayonnaise, Greek yoghurt (or sour cream), lime juice, salt, and pepper in a small bowl to create a creamy sauce.
- Lay out the tortillas and spread each with a thin layer of the sauce.
- Layer ingredients on each tortilla: lettuce, chicken slices, diced peppers, avocado, red onion, mixed peppers, olives (if using), coriander/cilantro (if using), and grated cheese.
- Fold in the sides of each tortilla and roll tightly to form a wrap.
- Optional: Lightly toast the wraps in a frying pan or griddle over medium heat for a few minutes until warm and crisp.
- Slice diagonally in half or serve whole. Enjoy immediately!
