With the heat these days, there is nothing better than refreshing the palate with cold lemon cream, a no-bake dessert that is very quick to prepare. Delicious and also ideal for fillings.
Cold lemon cream will keep in the refrigerator for two days. It can be used as a spoon dessert or as a filling for cold cakes or pastries.
Ingredients:
- 200g (7 oz) Mascarpone cheese
- Juice of 1 lemon
- 250ml (1 cup) Double cream or Heavy whipping cream (sweetened)
- 1 tablespoon Limoncello (optional – see note for homemade recipe)
How to prepare Chilled Lemon Cream:
- Whip the cream well firm (so it should be nice and cold from the refrigerator) and set aside.
- In a bowl, mix the mascarpone by softening it with a spoon until it is reduced to a cream.
- Put the lemon juice and limoncello in a bowl and add a first tablespoon of cream, mix quickly and then add, alternating mascarpone and cream always one tablespoon at a time.
- Put the cold lemon cream in the refrigerator and then use it for your desserts or enjoy it by the spoonful as a dessert.
