Chocolate Muffins: Quick and Easy Recipe with Greek Yogurt…
Chocolate muffins are a great classic. Perfect from breakfast to after dinner, they are soft, yummy and irresistible. There are so many types of recipes. With butter, vegan, filled, triple chocolate or with just cocoa. The recipe I propose today is without butter and with Greek yogurt. I admit, even this time I bought Greek yogurt with the idea of starting to eat light. And this time, too, I ended up using it in a super yummy recipe. The chocolate muffins, made this way are really soft, the dough comes out very firm and easy to portion.
Ingredients:
- 3 eggs
- 150g (3/4 cup) granulated sugar
- 150g (2/3 cup) Greek yogurt
- 1 pinch of salt
- 200g (1 2/3 cups) all-purpose flour
- 50g (1/2 cup) unsweetened cocoa powder
- 75g (1/3 cup) vegetable oil
- 100g (2/3 cup) dark chocolate chips
- 1 packet (16g or 4 teaspoons) baking powder
How to prepare Chocolate Muffins:
- In a bowl, we bring together the eggs and sugar. We whip with electric whips until the mixture is well whipped and frothy.
- We add the Greek yogurt, oil and a pinch of salt. We give it a stir with a spatula and then whisk again with electric whips.
- We combine the powders: 00 flour, bitter cocoa and sifted baking powder. We mix with the whisk and whip again with the electric whips to remove all the lumps. We will thus obtain a firm and well-blended mixture.
- We combine 70 g of the 100 g of chocolate chips, 30 g we keep for the garnish. We mix with the spatula making gentle movements from the bottom to the top.
- We fill the muffin cups 2/3 full so as to leave space for rising. This recipe makes 10-12 muffins, depending on the size of the molds. We add the chocolate chips kept aside and bake at 180°C (340°F) for about 22 minutes.
- We take the chocolate muffins out of the oven, let them cool completely and they are ready to be enjoyed!
