Chocolate Salami : Bakeless Italian Dessert…
the cocoa salami is a variation of the popular chocolate salami, a typical homemade preparation that can be counted among the quick and easy desserts and also without baking, perfect for any occasion, for a mouth-watering snack, to enrich a holiday buffet or even as an end-of-meal treat. Excellent yield and very little effort in this even quicker version, which includes the use of bitter cocoa powder in place of melted chocolate. This eye-catching sweet version of salami will win you over with the first slice!
Ingredients :
- 180g (6.3 oz) plain biscuits/cookies (such as digestive biscuits or graham crackers)
- 125g (1/2 cup + 1 tbsp) softened butter
- 100g (1/2 cup) brown sugar
- 60g (1/2 cup) unsweetened cocoa powder
- 2 egg yolks
- 10g (2 tsp) cognac or brandy
- 1 pinch of salt
How to Prepare Chocolate Salami:
- To prepare the cocoa salami first crumble the dry cookies and keep them aside. Pour the soft butter and brown sugar into a large bowl.
- Also add the salt and process the ingredients with electric whips until smooth. Add the egg yolks and liqueur to the mixture.
- Mix again until completely absorbed. Finally pour the sifted bitter cocoa into the bowl and process with the electric whips for a few seconds. Incorporate the crumbled cookies into the bowl.
- Stir the ingredients to mix everything well. Transfer the mixture to a sheet of baking paper and, with your hands, form the sausage by rolling the paper.
- Press well to compact and wrap the sausage with foil. Let it firm up in the refrigerator for about 2 hours. Cut the cocoa salami into slices and enjoy!
