Coffee pancakes are mouth-watering sweet pancakes , a variation of classic pancakes that combines the softness of the batter with the intense aroma of coffee, making them irresistible from the first bite! Ideal for those who like to start their days with taste and energy, these butterless pancakes are very simple and quick to prepare, perfect not only for breakfast, but also as a snack to share with family or friends. In fact, coffee pancakes can become a pampering moment to recharge you throughout the day! We served them with a delicious chocolate sauce but you can customize them by accompanying them with honey, maple syrup or fresh fruit, for example.

Ingredients:

ingredients (for 16 pancakes)

  • 155g (1¼ cups) Plain flour
  • 155ml (⅔ cup) Milk
  • 2 Medium eggs
  • 60g (¼ cup) Caster sugar
  • 10g (2 tbsp) Instant coffee
  • 8g (2 tsp) Baking powder
  • 20g (1½ tbsp) Vegetable oil, for greasing
  • 1 Pinch of salt

For the accompanying cream:

  • 250g (9 oz) Dark chocolate (50% cocoa)
  • 250ml (1 cup) Double cream

How to prepare Coffee Pancakes

  1. To prepare the coffee pancakes as first thing separate the yolk from the egg white and keep the latter aside. Add sugar and a pinch of salt to the yolk and mix with a whisk.
  2. Also pour in the milk and seed oil, then stir again. Add the instant coffee and stir to dissolve it evenly.
  3. Now add the sifted flour and baking powder and mix until smooth and lump-free. Keep aside and whip the egg whites with electric whips in a clean bowl.
  4. Once stiffly whipped 10 incorporate it into the coffee mixture, stirring gently from the bottom up so as not to disassemble it .
  5. Grease a nonstick pan with seed oil, pour the batter into the pan by spoonfuls  and cook for 2-3 minutes, until you see bubbles appear on the surface.
  6. Flip the pancakes and complete cooking on the other side as well. Transfer them to a serving plate and sprinkle with powdered sugar. For the accompanying sauce: chop the dark chocolate  with a knife and heat the cream in a small saucepan.
  7. Pour the chocolate into the hot cream 19 and stir to melt it until the sauce is smooth.
  8. Stack the pancakes and let the chocolate drip over the surface. Your coffee pancakes are ready to be enjoyed!
