The recipe is really very simple and within everyone’s reach, what you will need is the special sharpener to turn zucchini into spaghetti. In fact, this tool is essential to prepare this recipe. Alternatively, if you can’t find it, you don’t have to give up this treat: you can in fact cut the zucchini into very thin strips lengthwise. It is likely that the “spaghetti” will come out a little thicker, but the result will still be delicious!

Ingredients:

  • 2 courgettes (zucchini)
  • 8 cherry tomatoes
  • 70g primo sale cheese / 2.5 oz fresh, mild cheese (such as queso fresco or fresh mozzarella)
  • 1 clove of garlic
  • Olive oil
  • Salt
  • Pepper

How to Prepare Courgette Spaghetti:

  1. Wash zucchini, dry them, and with the appropriate tool create zucchini noodles.
  2. In a frying pan, heat oil and garlic. Add chopped cherry tomatoes, a pinch of salt and cook for 5 minutes.
  3. Add the zucchini, add a pinch of salt, and continue cooking for about 5 to 6 minutes.
  4. Serve the zucchini noodles in the serving dish and top with a good grinding of pepper and the cubed first-salt cheese.
