Creamy and fresh lemon Spaghetti, the perfect Dinner Recipe…
Who said a gourmet dish requires exotic ingredients and hours at the stove? Creamy Lemon Spaghetti is proof that with a few simple ingredients and a pinch of creativity, real magic can be created in the kitchen. A perfect dish for warm evenings or for when we crave a touch of freshness.
Ingredients:
- 300g (10.5 oz) spaghetti
- 2 unwaxed/organic lemons
- 500ml (2 cups) water
- 50g (1.75 oz) Pecorino Romano cheese
- 6 mint leaves
- Freshly ground black pepper, to taste
- Fine salt, to taste
How to Prepare Creamy and fresh lemon Spaghetti:
- First, remove the peels from the lemons with the help of a peeler and place them in a pitcher. Then pour cold water inside and let it macerate in the refrigerator overnight.
- The next day, drain the lemon water directly inside a pan. Then remove the lemon peels.
- Bring the resulting water to a boil and here directly drop the pasta (the fine spaghetti).
- Cook the pasta then by risottoing it, adding a few ladles of hot water if necessary.
- Once the spaghetti is al dente, turn off the heat.When the heat is off, stir in plenty of grated Pecorino Romano cheese or, alternatively, a provolone or some other mild cheese.Also add the zest of a grated lemon and a few fresh mint leaves.
- Stir-fry vigorously again with the heat off, and when the spaghettini is creamy, serve on a plate.
