Crispy Cauliflower Fritters: A Delicious Way to Eat More Vegetables…
As the colder season begins, this becomes one of my favorite dinner-saving recipes because in addition to being really quick to prepare, it is a super tasty dish.
In today’s recipe the fritters are cooked in oil however you can also choose to cook them without added fat in a nonstick pan. This makes cauliflower fritters a viable alternative even for those following low-calorie diets.
Ingredients for Cauliflower Fritters
- 300g (about 10.5 oz or 3 cups) cauliflower florets
- 2 eggs
- 60g (about 2 oz or 2/3 cup) grated Parmesan cheese
- 2 tablespoons all-purpose flour
- Nutmeg, to taste
- Sweet paprika, to taste
- Salt, to taste
How to prepare Crispy Cauliflower Fritters:
- In a large bowl combine the eggs, salt, paprika, and nutmeg.
- Add the Parmesan cheese and mix until all the ingredients are combined, then set aside.
- Clean the cauliflower and blend with the help of a blender until firm and creamy.
- Combine the cauliflower with the eggs, then add the 00 flour as well.
- Heat the oil in a frying pan over medium low heat, then cook the fritters until golden brown on both sides.
- When ready, serve the fritters in a serving dish and add a pinch of salt. If liked, you can accompany the pancakes with a sauce, such as mayonnaise or yogurt sauce.
