Ingredients:
- 300g (10.5 oz or 2 1/4 cups) whole almonds, skin-on
- 200g (1 cup) granulated sugar
- 1 teaspoon lemon juice
- 50ml (3 1/3 tablespoons or 1/4 cup) water
How to Prepare Crunchy Almond Brittle:
- Spread the almonds on a baking sheet and toast them in a preheated oven at 150°C for about 10 minutes, until lightly browned. This will enhance their flavor and provide extra crunch.
- In a large saucepan, pour the sugar, water and lemon juice. Cook over medium heat, without stirring, until the sugar has completely dissolved and begins to take on an amber color.
- Once the caramel is ready, add the toasted almonds and stir quickly, making sure that each almond is well covered by the caramel.
- Pour the mixture onto a surface lined with baking paper and, with the help of a spatula, spread the crisp to the desired thickness. (Be careful not to burn yourself! The temperature of the caramel is very high).
- Let the crisp cool to room temperature. After it has solidified, break it into pieces or cut it into bars. Your almond crisp is now ready to serve or packaged in elegant gift packages.
