Delicious Matcha Cookies : Japanese-Inspired Bliss…
The main ingredient in today’s recipe is Matcha tea, a powdered Japanese green tea that is made from dried tea leaves and buds. Therefore, we decided to prepare some very tasty and colorful matcha tea cookies and thus take advantage of all the qualities of these very precious Japanese leaves!
Ingredients :
for approximately 45 small cookies:
- 4 teaspoons matcha green tea powder
- 200g (2 cups) ground almonds (almond flour)
- 200g (1 2/3 cups) powdered sugar (icing sugar)
- 2 large egg whites
- 1 vanilla pod (or 1 teaspoon vanilla extract)
- Pine nuts for topping, as needed
How to prepare delicious Matcha Cookies:
- The first thing to do to make the two-clock cookies is to whip the egg whites stiffly with half the sugar. Then finely chop the toasted almonds in a mixer put them in a bowl and combine them with the remaining sugar. Then add the seeds of a vanilla bean and Matcha tea, mix and add the stiffly beaten egg whites.
Mix with a spatula until all the ingredients are combined. Take some ‘dough with a spoon (about 10 g) and with the palms of your moistened hands make balls.
Roll the resulting balls in a container where you will have put pine nuts . Arrange the cookies on a baking sheet lined with baking paper 9 and bake the Matcha tea cookies in a hot oven for about 15 minutes at 170°C (340°F).
