How to make Delicious Savory Potato, Pepper, and Carrot Pizza Recipe:
- First, peel the potatoes, then grate them using a vegetable peeler. Place the grated potatoes in a bowl, cover with water, stir with your hands, then drain them in a colander and set aside.
- Drizzle some EVOO into a non-stick skillet, add the chopped onion, stir, and cook until it becomes translucent.
- Now add the grated carrot, diced bell pepper, salt, and pepper. Stir, let them soften, and turn off the heat.
- Transfer the grated potatoes into a bowl, add the carrots, bell pepper, and chopped parsley, and set aside.
- Break the egg into a small bowl, season with salt, and beat well with a hand whisk. Add the milk and flour, mixing until you get a smooth batter.
- Pour the batter over the potatoes, carrots, and bell pepper mixture, stirring until it becomes a soft, compact consistency.
- Line a non-stick, oven-proof skillet (or a baking pan) with parchment paper, grease it with EVOO, place the mixture on top, and spread it evenly.
- Bake in a preheated oven at 350°F (180°C) for 30-35 minutes.
- After baking, sprinkle the surface with the grated cheese (or crumble cottage cheese by hand) and bake for another 15 minutes at 350°F (180°C) before serving.
