Easy Almond Biscotti: sweet, & so good with coffee!…
Almond cookies are delicious aromatic treats inspired by the traditional Sicilian Biscotti, tasty almond paste-based treats with a unique and timeless flavor. We propose here a simplified preparation compared to the original recipe: no mixer to blend the almonds, but they are used already in flour, without detracting from the taste and texture that remains soft inside and with a pleasant crust on the outside. Allow yourself to be tempted by these very soft almond cookies, shaped like cute little donuts, and come and discover how easy it is to make them!
Ingredients :
- 300g (2½ cups) all-purpose flour
- 200g (1 cup) granulated sugar
- 2 large eggs
- 200g (1½ cups) whole almonds
- 1 tsp baking powder
- 1 tsp vanilla extract
- Zest of 1 lemon (optional)
- Pinch of salt
How to prepare Easy Almond Biscotti:
- To prepare the almond cookies, pour the almond flour, powdered sugar, grated orange zest and egg whites into a bowl.
- Sweeten with the mixed-flower honey. Mix with a spoon, and when the ingredients are well blended, proceed to knead with your fingertips. Transfer the dough ball to a floured work surface with powdered sugar and break off pieces of dough weighing 30 g each and form into balls.
- Dip the almond cookies in powdered sugar and as you go place them on a baking sheet lined with parchment paper. You can shape the almond cookies into doughnuts by making a hole in the center with the handle of a wooden ladle.
- Bake the almond cookies in a static oven 10, preheated to 170°C (340°F) for about 12 minutes. Take them out of the oven and let them cool completely before enjoying them .
