Ingredients:
- 300 grams (10.5 oz) of Tropea red onions
- 10 grams (0.35 oz) of sugar
- 10 grams (0.35 oz) of salt
- Apple cider vinegar
- Water
- White peppercorns
- A few sprigs of rosemary
- These quantities will make 2 jars, each 250 grams (8.8 oz).

- Before starting, sterilize the jars by following a standard sterilization procedure.
- Prepare the onions: Cut off the roots, peel them, and rinse them. Dry them thoroughly, then slice them thinly and place them in your sterile jars, sprinkling a few peppercorns throughout.
- Add a teaspoon of salt and a teaspoon of sugar to each jar, then pour in enough apple cider vinegar to fill each jar halfway.
- Bring water to a boil in a saucepan. Once boiling, pour the water into the jars, filling them to the neck.
- Screw on the lids and shake well to mix the ingredients and dissolve the granules of salt and sugar.
- Let the jars cool completely at room temperature, then place them in the refrigerator. Wait a full day before opening and enjoying them.
