Ingredients:
- 2 eggplants
- 1 onion, chopped
- 5.3 oz (150g) light cheese, grated (such as low-fat mozzarella)
- A handful of mixed bell peppers, diced
- 4 turns of extra virgin olive oil
- 5.3 oz (150g) crushed tomatoes
- Chopped parsley to taste
- Salt and pepper to taste
How to make Eggplant Roll-Up:
- Trim the ends of the eggplants and slice them lengthwise into 1cm (0.4 inch) thick slices. Set aside.
- Line a baking sheet with parchment paper and sprinkle with about 1 oz (30g) of grated cheese. Arrange the eggplant slices on the sheet, slightly overlapping to avoid gaps. If you have extra eggplant slices, cube them for the filling.
- In a small bowl, mix 2 turns of olive oil with salt and pepper. Brush this mixture over the eggplant slices. Bake in a preheated oven at 350°F (180°C) for 30 minutes.
- In a non-stick pan, heat a drizzle of olive oil. Add chopped onion, cubed eggplant (if any), and diced peppers. Cover and cook for a few minutes.
- Add tomato passata (crushed tomatoes), salt, and pepper. Stir, cover, and cook for 5 minutes. Sprinkle with chopped parsley, mix well, and remove from heat.
- Spread the tomato and pepper mixture over the baked eggplant slices. Top with about 2.8 oz (80g) of grated cheese.
- Roll up the eggplant slices using the parchment paper to help. Top with the remaining cheese (about 1.4 oz or 40g).
- Bake in the preheated oven at 350°F (180°C) for 5 minutes. Let it settle for a moment before serving.
