Fluffy Apple and Chocolate Chip Cake…
I admit it, I’m getting the apple cake fixation, yes, it’s getting a little out of hand, in just a few days I’m churning out apple desserts a go gò, today it’s the turn of the super fluffy apple and chocolate chip cake, I was on a diet but I couldn’t help but try it from how tempting it was of course I make the desserts for the family and neighbors!
Ingredients :
- 3 medium to large eggs
- 130g (2/3 cup) sugar
- 3 Golden Delicious apples
- 180g (1 1/2 cups) all-purpose flour
- 80g (1/3 cup) unsalted butter
- 50g (1/3 cup) dark chocolate chips
- 1 packet (about 2 teaspoons) baking powder
- Grated zest of 1 lemon
- Ground cinnamon, to taste
- Pinch of salt
How to prepare Fluffy Apple and Chocolate Chip Cake:
- In a bowl beat the eggs with electric whips, (the eggs should be at room temperature, so they will assemble better), together with the sugar, lemon peel and a little cinnamon, until the mixture is nice and light, shiny and frothy, roughly it will take about 7-8 minutes.
- Then add the melted butter at this point, mix well and add flour, baking powder and salt, always use electric whips so the mixture is perfectly blended.
- Peel and slice 2 apples not too thinly, add them to the mixture, add the chocolate chips as well and pour into a buttered and floured cake mold about 20 cm in diameter; slice 1-2 apples and arrange them on the dough in a halo or as you like.
- Bake at 180° C (340 °F) for about 40-45 minutes.
- Remove the apple and chocolate chip cake from the mold only when it has cooled.
