Ladies and gentlemen, this recipe is truly a game changer! Forget about waiting times for the oven to heat up, long baking times that exceed half an hour. Today I show you how to make a microwave cake that bakes in just 12 minutes. It has nothing to envy the classic cakes baked in the oven. It is tall, fluffy and perfect for filling or dunking in a nice cup of milk and coffee.

Ingredients :

  • 3 Eggs
  • 200 grams (1 cup) Sugar
  • 130 grams (1/2 cup + 1 tablespoon) Water
  • 130 grams (1/2 cup + 1 tablespoon) Vegetable oil
  • 270 grams (2 and 1/8 cups) All-purpose flour (Type 00)
  • 30 grams (1/4 cup) Unsweetened cocoa powder
  • 1 sachet Baking powder
  • 1 sachet Vanillin (or 1 teaspoon vanilla extract)

How To Prepare Fluffy Microwave Cake:

  1. In a large bowl we break the eggs and start mixing with a whisk or electric whisks. Without ever stopping stirring we also add the sugar (and work it in so that it comes together a bit with the eggs), water and oil.
  2. Once the liquids are blended we move on to the powders. We add the flour in several batches and mix. Now we combine the sifted cocoa, baking powder and vanillin. We mix vigorously to remove all lumps. The dough is ready!
  3. As a mold I used a 24 cm diameter disposable food-grade paper one. Alternatively you can use a silicone or ceramic one, the important thing is that it bears the microwave icon, that way you are sure it is suitable for this type of baking. We pour the batter inside the mold and level it slightly.
  4. We bake the cake at 600 watts for 12 minutes. Unfortunately, each microwave model varies a bit in power and cooking mode. Before removing it from the mold, I recommend making sure it is fully baked by doing the classic toothpick test and touching the surface with your finger.
  5. Let’s take the cake out of the mold, let it cool and decorate it as desired, I enriched it with some hazelnut cream and a sprinkling of coconut flakes. You will feel the goodness!
