Four-Grain Apple Cake : More apples than dough!…
We tried to come up with a recipe that would combine the virtues of cereal flours with the wholesome goodness of apple Cake, the quintessential homemade dessert… and here is the 4-grain apple Cake! Simple and rustic-looking thanks to the use of brown sugar, it is enriched with diced apples and oatmeal. A combination we had already experimented with in the apple crumble recipe and which was a great success! So we bet that the 4-grain apple cake will also win you over with its fluffy texture and unmistakable taste. We are waiting for your opinion!
Ingredients :
- 1.5 lbs (700 g) Rennet apples (or any firm baking apples)
- 3/4 cup (100 g) All-purpose flour (Plain flour)
- 3/4 cup (100 g) Whole spelt flour
- 3/4 cup (100 g) Whole millet flour
- 1/2 cup (50 g) Rolled oats
- 3/4 cup + 1 tbsp (170 g) Brown sugar
- 1/2 cup + 1 tbsp (130 g) Unsalted butter, softened
- 3 medium eggs (165 g), at room temperature
- 2/3 cup (150 ml) Milk, at room temperature
- Zest of 1/2 lemon
- 2 tbsp (30 ml) Lemon juice
- 1 tbsp (20 g) Honey
- 2 1/2 tsp (12 g) Baking powder
- 1 pinch of salt
How to make Four-Grain Apple Cake:
- To prepare the 4-grain apple pie, first melt the butter and let it cool. Wash the apples and split them in half, then remove the core and peel and cut them into cubes about cm 3.
- Transfer the apples to a bowl, add the honey, grated zest 5 and lemon juice. Mix well and keep aside.
Now put the eggs in another bowl, add the brown sugar and salt, beat with a hand whisk, then pour in the melted butter. - Mix well, then add the 3 kinds of flour, oatmeal and baking powder.
- Mix again, then add the milk and apples with all the juice and stir with a spatula to mix everything together.
- Line a 24-cm-diameter hinged mold with baking paper and pour the batter inside. Level with a spoon and sprinkle the surface with oatmeal.
- Finally sprinkle with brown sugar and bake in a preheated static oven at 180° C (350°F) for 45 minutes, placing the cake pan on the medium rack. Once baked, take it out of the oven and let it cool. Your 4-grain apple pie is ready to be enjoyed!
