Lovers of fluffy desserts with lots of good fruit, of the healthiest and most wholesome kind, bring it on! Today’s is a special recipe, perfect for the whole family. It is gluten-free apple and blackberry pie, a dessert whose starring flours are those that are naturally gluten-free. And to make it really special, we have chosen to use brown sugar and honey that give a more intense and rich flavor.

Ingredients for a 22 cm (9-inch) tin:

  • 110g (1 cup) Almond flour
  • 50g (1/3 cup) Rice flour
  • 60g (1 medium) Egg
  • 80g (1/4 cup) Wildflower honey
  • 70ml (1/3 cup) Whole milk
  • 5g (1 tsp) Gluten-free baking powder
  • 260g (1 large) Golden Delicious apple
  • 100g (3/4 cup) Blackberries
  • 50g (1/4 cup) Brown sugar
  • Icing sugar/ Powdered sugar, for dusting

How to make Gluten-Free Apple and Blackberry Cake:

  1. To prepare gluten-free apple and blackberry pie, start by cleaning the apples. Cut them into four parts, core them, and finally peel them. Then cut them into thin slices, about 2-3 mm, and gradually pour them into a bowl. You will get 200 g of them.
  2. Sprinkle with brown sugar, mix, and keep aside. Meanwhile, take care of the dough: in a bowl pour the egg and honey.
  3. Operate the whisks and let the egg whisk slightly, then add in sequence the almond flour, then the milk flush, and the rice flour.
  4. Last, add the baking powder, and when it is incorporated, turn off the whisks. Add the apples to the mixture and gently mix everything together.
  5. Pour the mixture into a buttered 22-cm mold and carefully level the surface with a spatula. Then arrange the blackberries filling the gaps and move on to baking.
  6. The gluten-free apple and blackberry pie bakes in a hot static oven at 180°C (350°F) for about 45 minutes. Once baked, let it cool completely before unmolding the cake and arranging it on a serving plate. Once cooled completely, sprinkle your gluten-free apple and blackberry pie with powdered sugar if you like. The cake is ready; all you have to do is taste it!
